‘Tis The Stilton to be Jolly

Serves 1 Cooking time: 10 minutes

Lots of stilton left from your Christmas Cheeseboard?  Crumble big pieces into your jacket potato and top with parma ham and apple for a quick and easy post-Christmas lunch.

‘Tis The Stilton to be Jolly

Ingredients

Leftover stilton (or any other blue cheese) broken into large pieces

1 apple

a handful of watercress

a few cherry tomatoes

2 slices Parma ham

Olive oil, balsamic vinegar or your favourite dressing

Bannisters Yorkshire Family Farm Baked Jacket Potato

Method

Cook the Bannisters Baked Potato (only 5 mins) as per instructions.

Assemble a small salad with watercress, thinly sliced apple and chopped cherry tomatoes on the side of a plate.

Pop the Baked Potato on the plate, open up, and top with stilton pieces, torn strips of parma ham and apple.

Drizzle over your favourite dressing. Eat while baked potato is still steaming hot and stilton is only just starting to melt.
