A strength-boosting combo of spinach, ricotta and crunchy cashews.

A strength-boosting combo of spinach, ricotta and crunchy cashews.
Heat the oil in a large pan, add the nutmeg and stir quickly.
Turn down the heat and add the spinach allowing it to wilt.
Season with black pepper.
Remove from the heat and stir in the ricotta cheese and cashew nuts.
Pile mixture on top of your hot baked potato and finish with olive oil and black pepper.
