Slow Cooked Beef in Beer in a Baker

Serves 4 Cooking time: 8 hours

Beef in beer: slow to cook, but fast in flavour, this is one of our family’s favourites.  Passed from Mother to two daughters, we all love this winter warmer recipe.  There are lots of ways to serve this scrumptious stew, but of course, we love it heaped into a piping hot baked jacket potato.  So very easy, and so very tasty.  Enjoy!

Slow Cooked Beef in Beer in a Baker

Ingredients

600g topside beef, diced

1 onion, peeled and sliced

2 carrots, peeled and chopped

1 celery stick, chopped

25g butter, diced

1 tbsp tomato puree

1 tsp dried mixed herbs

150ml brown ale (we like Wold Top Brewery!)

300ml beef stock

25g plain flour

Fresh parsley, roughly chopped

Salt and pepper to season

Method

Place the beef, onion, carrots, celery, butter, tomato puree, mixed herbs, brown ale, beef stock and seasoning in your slow cooker. Cook on low for 7-8 hours. In the last hour of cooking, stir in the flour.

Cook the Bannisters potatoes as per instructions. Load your cooked potatoes with the casserole and sprinkle with fresh parsley and a shake of black pepper.
