What more classic filling for a potato is there than baked beans? But home-made baked beans taste even better!
2 tbsp vegetable oil
1 small onion, peeled and finely chopped
1 medium carrot, peeled and finely chopped
1 clove garlic, crushed
2 tsp ground paprika
1 tbsp clear honey
1 tbsp Worcestershire Sauce
1 400g can chopped tomatoes
2 400g cans haricot beans, drained and rinsed
100ml vegetable stock or water
salt and pepper to season
75g mature Cheddar, grated
snipped fresh chives to garnish

Heat the oil in a large pan, add the onion and carrots and fry for a few minutes until soft.
Add the garlic and paprika and stir well, fry for 30 seconds. Add the honey, Worcestershire Sauce, tomatoes and bring to the boil, stirring. Season well then cover and simmer for 15 minutes.
Remove the pan from the heat, use a stick blender to blitz the sauce until smooth. Add the beans and 100ml water and bring back to the boil.
Serve spooned into hot baked potatoes and top each with a heap of grated cheese. Sprinkle with chives if liked.
