This week it’s National Vegetarian Week and with one in eight Britons reportedly following a vegetarian or vegan diet, as well as one in five reducing their meat intake, you certainly won’t be alone if you decide to give meat-free living a try.

This tasty summer salad can be prepared in the time it takes to heat your spud. A mixture of cherry tomatoes, feta, basil and pesto, it’s so fresh it’s almost embarrassing!

This deliciously spicy butternut squash, spinach and chickpea curry is also suitable for vegans. It’s full of natural goodness and can be on the plate in less than half an hour. Great for when you come home from work or the gym and hunger strikes!
